5 Quick Bites for Janmashtami

We love birthdays like everyone else. And now that the cutest and the chirpiest God’s birthday is right around the corner, how can we not talk about it. Krishna Janmashtami is on the 14th of August and on this day we all celebrate, lord Vishnu’s earthly appearance in Krishna’s form. Krishna Janmashtami is the perfect occasion for all those who wish to have a spiritual inclination and upliftment. Fasting all day is a part of Janmashtami celebrations. Since fasting food is tricky and boring, we bring you five quick bites which are easy to make and are also delicious. 

Makhana Namkeen

We know this is the day, when you wish to savour on sweets. But eating sweets all day can be a little daunting for your taste buds and also for your waist! So, this is a great snack for all those who like things to be salty. *Eye rolling*

INGREDIENTS

  • Ghee – 2 tbsp
  • Makhane – 2 cups
  • Almonds – ½ cup
  • Cashew nuts – ½ cup
  • Kharbooje ke Beej – 3 tbsp
  • Dry coconut – ¼ cup ( cut into thin slices )
  • Curry leaves – 10-12
  • Himalyan Salt (Sendha Namak) to taste
  • Black pepper powder – ½ tsp
  • Chaat masala powder – ½ tsp

All these ingredients can be bought from Grofers.

INSTRUCTIONS

  • Roast the Makhane in ghee until they are crispy and crunchy.
  • Remove from pan and keep aside.
  • Heat the remaining ghee in the pan and fry almonds and Cashew nuts until brown.
  • Remove and keep aside.
  • In the same ghee, roast the coconut and curry leaves.
  • Mix all the ingredients in a bowl.
  • Let the Namkeen cool.
  • Store in an airtight container for up to 2 weeks.

Sweet Potato Chat

This Chat is for all those who love a little tanginess in their food.  This Chat is the best food options for those who wish to have the best of both the worlds: sweet and salty.

INGREDIENTS

  • 1/2 kg Sweet Potato – boiled, peeled, cubed
  • 1 Tbsp chaat masala
  • 1 Tbsp chilli powder
  • 1 Tbsp cumin seeds – roasted and powdered
  • 1 Tbsp Himalyan salt (sendha namak)
  • Lemon juice-to taste
  • 2-3 green chillies – finely chopped
  • Cubed cucumber and apples, optional
  • Coriander leaves – chopped, to garnish

INSTRUCTIONS

  • Wash the exterior of each sweet potato under running water.
  • Add the Sweet Potatoes and water in a pressure cooker. Make sure that all the Sweet Potatoes are completely submerged in water and cook till it is boiled.
  • After 15-20 minutes, check if are done, by inserting a knife or fork into the centre of the Sweet Potato, if it inserts easily they are done.
  • Let it cool and then peel off the skin.
  • Cut them into small pieces or cubes.
  • Now take a large bowl add chopped sweet potato, chat masala, chilli powder, cumin seeds, and salt and mix well (adjusting spices according to taste).
  • Squeeze some lemon juice and mix lightly.
  • Serve

Milk Peda

This sweet is an all-time favourite and is revered sacred especially during Janmashtami.  It’s quick to make and tastes heavenly!

INGREDIENTS

  • 1-1/2 cups Milk Powder
  • 400 grams Condensed Milk
  • 1/2 teaspoon Cardamom Powder
  • 1/4 cup Butter , or ghee melted
  • Pistachios, a few sliced

INSTRUCTIONS

  • To begin making the Homemade Doodh Peda Recipe, in a wide non- stick pan, combine the condensed milk and milk powder and mix it into a smooth paste without any lumps.
  • It should be like a thick idli batter. Add in the cardamom powder, ghee or butter into the mixture and stir to combine well.
  • Place the pan on medium heat and stir continuously until it becomes a thick batter. Turn off the heat as soon as the mixture thickens and you see it leaving the sides of the pan.
  • The process will be a little hard, as the mixture will thicken up quickly. The mixture will thicken further when it is cooling down.
  • Once it becomes thick and leaves the sides of the pan turn off the heat and transfer the peda dough to another bowl and allow it to cool to a temperature such that you can use your hands to knead them.
  • Once cooled, knead the peda dough until smooth and fluffy.
  • You can add a little ghee to knead if the peda’s are too hard. Divide the dough into small lemon sized balls. Make an impression with the thumb in the center and place a piece of pistachio in the center and serve.
  • Serve the delicious Doodh Pedas as a snack

Lassi

Lassi is rightfully regarded as the “pride of Punjab”. This pride is our Guardian during those fast days. This beverage apart from being worth relishing is really easy to make.

INGREDIENTS

  • Yogurt – 600 gm
  • Sugar – 7-8 small tbl spoon
  • Ice cubes – 1 1/2 glass

INSTRUCTIONS

Put curd and sugar in the mixer and beat it till sugar dissolves. Add ice cubes in it and beat it again. The delicious Lassi is ready for drink Keep it in a glass and serve it.

Palak Pakoda

This snack is perfect for all those who can’t do away with a little munch. With Palak (Spinach) being full of iron, this snack will make sure you are free from fasting woes!

INGREDIENTS

  • 1 cup Buckwheat flour or Kuttu ka atta.
  • 1 cup chopped Palak or spinach.
  • 1 cup Green chilli
  • 2tbsp peanuts (moongphali)
  • Himalayan Salt (Sendha Namak)
  • Water as required

  • Roast the peanuts till they become crisp.
  • After cooling them down, coarsely crush them.
  • Make sure you clean the Spinach well.
  • Mix all the ingredients together.

  • Heat oil for shallow fry.
  • Drop a spoon of batter; take them out once they look crisp.
  • Serve them with green Chutney or homemade tomato sauce
